Ingredients
- 4 cups day-old cooked rice
- 3 eggs, beaten
- 1 onion, diced
- 2 carrots, diced
- 1 cup frozen peas
- 3 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet.
- Add the beaten eggs and scramble until cooked. Remove and set aside.
- Add the remaining oil and sauté the onion and carrots until soft.
- Add the garlic and cook for 1 minute.
- Add the rice and break up any clumps.
- Stir in the peas and cooked eggs.
- Add the soy sauce and sesame oil.
- Cook for 5 minutes, stirring frequently.
- Season with salt and pepper to taste.
- Serve hot.
