Fried Rice

Use day-old rice for the best results. You can add chicken, mushrooms, or shrimp if you like.

Classic Fried Rice with eggs, vegetables, and day-old rice

Ingredients

  • 4 cups day-old cooked rice
  • 3 eggs, beaten
  • 1 onion, diced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet.
  2. Add the beaten eggs and scramble until cooked. Remove and set aside.
  3. Add the remaining oil and sauté the onion and carrots until soft.
  4. Add the garlic and cook for 1 minute.
  5. Add the rice and break up any clumps.
  6. Stir in the peas and cooked eggs.
  7. Add the soy sauce and sesame oil.
  8. Cook for 5 minutes, stirring frequently.
  9. Season with salt and pepper to taste.
  10. Serve hot.
