Ingredients
- 60% regular vinegar
- 40% water
- 5.5g salt for each 100ml of the vinegar/water mixture
- Vegetable of choice (gherkin or red onions recommended)
- Spices and aromatics (peppercorns recommended)
Instructions
- Choose a vegetable to pickle. I usually pickle gherkin or red onions.
- Cut the vegetable in chunks, for the onions in strings.
- Fill a jar with the vegetable.
- Put the filled jar on a scale and fill the jar with water. This tells you how much of the water and vinegar mixture to you need to prepare.
- Lets say we measured we need 360g of the mixture. We might loose a bit due to boiling and spilling, so to make sure, make a bit larger mixture. For this case lets say 400g.
- Mix 240g of vinegar and 160g of water in a pot. Add 22g of salt and turn the heat up.
- Add any aromatics of your choices. I usually just go for few peppercorns.
- Once boiling, set aside for a moment.
- Pour the mixture inside of the jar with your vegetable.
- Let cool down, close, and place in your fridge.
- Let rest for at least a week and finish consume it within a month.
